They are Unicode letters rather than formatting, so they stay slanted wherever you paste them. Unicode has no slanted numbers, though, so digits stay upright in every italic style.

Italic is a slanted version of ordinary letters, so it stays easy to read. Cursive (script) uses looping, handwriting-like letterforms that are more decorative. Use italic for emphasis inside a sentence and cursive for names or short headings.
Unicode added the italic h (ℎ) as the Planck constant symbol years before the rest of the italic alphabet, so its slot in the italic set was left empty and ℎ is used instead. Your device may draw it with a slightly different font, but it is the correct character.
Neither app has an italic button for bios or captions, so copied Unicode italics are the way to do it. Handles (@usernames) accept only plain letters, numbers and a few symbols, so style your display name, bio or caption instead.
Not in chats: wrap a word in underscores, like _this_, and WhatsApp italicizes it for you. Unicode italics are useful where that formatting doesn't apply, such as your profile name or About text.
Often badly: some announce every letter as a mathematical symbol, others skip it. Italicize a few words for tone rather than whole sentences, and keep key details in plain text.
